Preparation Steps
- Preheat your oven to 400°F (200°C) and line a baking pan with parchment paper.
- Trim off both ends of the zucchinis and create a lengthwise slit down the center of each zucchini.
- Sprinkle Himalayan salt and freshly ground black pepper over the zucchinis, coating both the inside and exterior.
- Gently sprinkle half of the chopped fresh mint into the slits of the zucchinis, then insert strips of goat cheese.
- Drizzle extra virgin olive oil over the zucchinis, allowing it to flow into the slits.
- Place the stuffed zucchinis in the baking pan, cover loosely with foil, and bake for 10 minutes.
- After 10 minutes, remove the foil and continue baking for an additional 20 minutes until tender.
- Serve hot as an appetizer, light lunch, or side dish.
