- Preheat your oven to 350°F (175°C). Spray your loaf pan generously with baking spray to prevent sticking.
- In a large mixing bowl, whisk together 2 cups of all-purpose flour, 2 teaspoons of baking powder, and 1/2 teaspoon of kosher salt.
- In a separate bowl, combine 1 cup of full-fat Greek yogurt, the zest of 1 blood orange, 1 cup of granulated sugar, 2 large eggs, and 1 teaspoon of vanilla extract. Mix until smooth.
- Gradually stir the dry ingredients into the wet ingredients. Fold gently and add 1/4 cup of vegetable oil and 2 tablespoons of poppy seeds.
- Pour the batter into your prepared loaf pan, smoothing the top and optionally arranging thinly sliced blood oranges on top.
- Bake for 50 to 55 minutes, until a toothpick inserted into the center comes out clean.
- Let the cake cool in the pan for about 10 minutes, then transfer it to a wire rack.
- In a small saucepan, combine 1/4 cup of fresh orange juice with 1/2 cup of granulated sugar. Bring to a boil and stir until dissolved.
- Pour the warm glaze over the cooled cake, allowing it to soak in.
