  • 1 large Egg

  • 1/2 teaspoon Salt
For the Oat Crumble Topping
  • 1 cup Rolled Oats
  • 1/2 cup Brown Sugar
For the Filling
  • 1 cup Raspberry Jam Use thick jam

Method
 

Baking Instructions
  1. Preheat your oven to 350°F (175°C).
  2. Cream together the unsalted butter and granulated sugar for 3-5 minutes until fluffy.
  3. Add in the egg and vanilla extract, mix until fully combined.
  4. In a separate bowl, whisk together flour, baking powder, and salt. Gradually add to the butter mixture until just blended.
  5. Fold in rolled oats and brown sugar until crumbly.
  6. Lightly grease a 9x13 inch baking dish, press half the crumble mixture into the bottom.
  7. Spread a layer of raspberry jam evenly over the crust.
  8. Top with the remaining crumble mixture, pressing down gently.
  9. Bake for 25 to 30 minutes until golden brown and cooked through.
  10. Cool for 10 to 15 minutes before transferring to a wire rack.
