Step-by-Step Instructions
  1. Preheat your oven to 450°F (232°C).
  2. In a large oven-safe skillet, pour in a splash of olive oil and heat over medium heat for 1-2 minutes.
  3. Add chopped onion and sauté for 2-3 minutes until soft and translucent, then add minced garlic for 1 minute.
  4. Stir in tomato paste, smoked paprika, ground cumin, and crushed red pepper flakes, cooking for 1-2 minutes.
  5. Add drained black beans, salt, pepper, and red enchilada sauce, mixing thoroughly and simmering for 2-3 minutes.
  6. Sprinkle reduced fat sharp cheddar cheese evenly over the mixture.
  7. Transfer skillet to preheated oven and bake for 5-10 minutes until cheese is melted and bubbly.
  8. Let it rest for a minute, then serve with lime wedges.
