- Preheat your oven to 350°F (175°C). Prepare baking sheets lined with parchment paper.
- In a large bowl, cream together 1 cup of unsalted butter and 3/4 cup of granulated sugar until light and fluffy, about 2–3 minutes.
- Gradually mix in 2 cups of all-purpose flour and 1/4 teaspoon of salt until just combined.
- Gently fold in 3/4 cup of chopped maraschino cherries and 1/2 cup of mini chocolate chips.
- Use a cookie scoop to portion dough onto prepared baking sheets, spacing about 2 inches apart.
