Ingredients

For the Batter
  • 1 cup Cottage Cheese Can substitute with Greek yogurt for a different flavor profile.
  • 1 cup Rolled Oats Can be substituted with quick oats, but texture may vary.
  • 1/2 cup Applesauce Grated apple can be used as a substitute.
  • 1 large Egg Can be replaced with a flax egg for a vegan alternative.
  • 1 teaspoon Cinnamon Pairing with nutmeg is recommended for added depth.
  • 2 tablespoons Honey or Maple Syrup Optional; omit if natural sweetness is sufficient.
  • 1 teaspoon Baking Powder

Equipment

  • mini muffin pan

Method

Preparation Steps
  1. Preheat your oven to 350°F (175°C) and prepare a mini muffin pan by greasing it or lining it with mini muffin liners.
  2. In a large mixing bowl, combine the cottage cheese, rolled oats, applesauce, egg, cinnamon, and baking powder. If desired, add honey or maple syrup.
  3. Allow the batter to sit for about 5 minutes to let the oats absorb moisture.
  4. Using a scoop or spoon, distribute the batter into the mini muffin pan, filling each cup nearly to the top.
  5. Bake the bites for 18-20 minutes. They should be set in the center and golden on top when done.
  6. Let the bites cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
