Preparation Steps
- Preheat your oven to 350°F (175°C) and prepare a mini muffin pan by greasing it or lining it with mini muffin liners.
- In a large mixing bowl, combine the cottage cheese, rolled oats, applesauce, egg, cinnamon, and baking powder. If desired, add honey or maple syrup.
- Allow the batter to sit for about 5 minutes to let the oats absorb moisture.
- Using a scoop or spoon, distribute the batter into the mini muffin pan, filling each cup nearly to the top.
- Bake the bites for 18-20 minutes. They should be set in the center and golden on top when done.
- Let the bites cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
