Step‑by‑Step Instructions
  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. Cream the butter, vegetable oil, and brown sugar in a large mixing bowl for 2–3 minutes until fluffy.
  3. Add the egg and vanilla extract, mixing on low speed until combined.
  4. In another bowl, sift together baking soda, baking powder, salt, and flour. Gradually add to wet mixture while mixing on low.
  5. Prepare the streusel topping by mixing cold butter, brown sugar, flour, cinnamon, and a pinch of salt in a separate bowl.
  6. Portion cookie dough onto baking sheets, creating indentations for the streusel topping.
  7. Fill each indentation with streusel mixture.
  8. Bake for 10–12 minutes until edges are light golden brown and centers remain soft.
  9. Cool cookies on baking sheets for 5 minutes, then transfer to wire racks.
  10. Whisk powdered sugar, milk, and vanilla in a small bowl to make the icing.
