  1. Preheat your oven to 350°F (175°C) and grease a standard muffin tin.
  2. In a large mixing bowl, whisk the eggs until frothy and well-blended.

  4. Mix in the shredded cheddar cheese, followed by the chopped spinach and red bell pepper.
  5. Sprinkle the baking powder into the mixture and stir well to activate it.
