  • 1-2 tablespoons Cornstarch Mix with cool liquid before adding to avoid lumps.
For the Gnocchi
  • 1 pound Potato gnocchi Opt for high-quality brands.
For the Greens
  • 3 cups Baby spinach Can substitute with kale or favorite greens.
Optional Topping
  • 4 slices Cooked bacon Optional.

Step-by-Step Instructions
  1. Prepare Ingredients: Toss chicken, carrots, celery, onion, parsley, garlic, Italian seasoning, salt, pepper, and optional Better than Bouillon into slow cooker. Pour in broth.
  2. Cook: Cover and set cook on low for 6-8 hours or high for 4 hours.
  3. Shred Chicken: Remove chicken, shred, and return to cooker.
  4. Add Cream and Thicken: Whisk cornstarch with cream. Stir this into soup along with gnocchi and spinach.
  5. Final Cook: Cover and switch to high for 30-45 minutes.
  6. Adjust Consistency & Season: Stir, taste, and adjust seasonings to preference.
  7. Serve: Ladle into bowls and optionally top with bacon or herbs.
