- Prepare Ingredients: Toss chicken, carrots, celery, onion, parsley, garlic, Italian seasoning, salt, pepper, and optional Better than Bouillon into slow cooker. Pour in broth.
- Cook: Cover and set cook on low for 6-8 hours or high for 4 hours.
- Shred Chicken: Remove chicken, shred, and return to cooker.
- Add Cream and Thicken: Whisk cornstarch with cream. Stir this into soup along with gnocchi and spinach.
