Method
 

Preparation Steps
  1. Add cottage cheese to a blender and blend on high for 1-2 minutes until smooth.

  3. If the pudding is too thick, add a splash of milk and pulse briefly. If too runny, add Greek yogurt to thicken.
  4. Taste the pudding and adjust sweetness or lemon juice to your preference.
  5. Transfer pudding to a bowl or serving dishes and cover tightly. Chill for at least 30 minutes.
  6. Serve topped with additional lemon zest or fresh berries.
