- Add cottage cheese to a blender and blend on high for 1-2 minutes until smooth.
- Add lemon juice, zest, honey or maple syrup, and vanilla extract to the blender. Blend for 1 minute until fully incorporated.
- If the pudding is too thick, add a splash of milk and pulse briefly. If too runny, add Greek yogurt to thicken.
- Taste the pudding and adjust sweetness or lemon juice to your preference.
- Transfer pudding to a bowl or serving dishes and cover tightly. Chill for at least 30 minutes.
