Method
 

Cooking Instructions
  1. Bring a large pot of salted water to a boil. Cook pasta according to package instructions until al dente, about 8-10 minutes. Reserve ½ cup pasta water, then drain.
  2. In a skillet, melt butter over medium heat. Add minced garlic and sauté for about 30 seconds until fragrant.
  3. Sprinkle in flour and whisk for about 1 minute. Gradually add wine while whisking, and simmer for about 3 minutes until thickened.
  4. Stir in heavy cream and sun-dried tomatoes, simmering for another 5 minutes.
  5. Add Dijon mustard, lemon juice, and Italian seasoning, stirring gently for another minute.
  6. Mix in Parmesan cheese until melted, then fold in spinach and cook until wilted.
  7. Combine sauce with drained pasta, adjusting consistency with reserved pasta water. Season with salt and pepper.
