  1. In a medium bowl, whisk together the mayonnaise, Thai sweet chili sauce, minced garlic, and sriracha. Stir until smooth and set aside.
  2. Combine whole milk, sour cream, and lemon juice in one bowl. In another bowl, mix all-purpose flour, cornstarch, salt, pepper, and paprika. Dip each shrimp into the milk mixture, then coat with the flour mixture.
  3. Heat oil in a large skillet over medium-high heat. Fry shrimp in small batches for 2-3 minutes until golden brown and crispy. Drain on paper towels.
