Method
 

Cooking Instructions
  1. Heat a small non-stick fry pan over medium heat for about 2 minutes. Spray with cooking oil.
  2. Crumble ¾ oz of feta cheese into the pan, spreading it evenly. Sauté for about 2 minutes until golden brown.
  3. Crack a large egg into the pan, season with dried oregano and red pepper flakes. Cook until the whites are set, about 3 to 5 minutes.
  4. Warm a tortilla or toasted bread in another pan or microwave for 30 seconds. Smash avocado on top and drizzle with lemon juice.
  5. Transfer the cooked egg with crispy feta onto the tortilla or bread. Serve immediately.
  6. Top with pickled onions and a drizzle of chili oil before serving.
