- Heat a small non-stick fry pan over medium heat for about 2 minutes. Spray with cooking oil.
- Crumble ¾ oz of feta cheese into the pan, spreading it evenly. Sauté for about 2 minutes until golden brown.
- Crack a large egg into the pan, season with dried oregano and red pepper flakes. Cook until the whites are set, about 3 to 5 minutes.
- Warm a tortilla or toasted bread in another pan or microwave for 30 seconds. Smash avocado on top and drizzle with lemon juice.
- Transfer the cooked egg with crispy feta onto the tortilla or bread. Serve immediately.
- Top with pickled onions and a drizzle of chili oil before serving.
