Ingredients

For the Gnocchi
  • 1 package gnocchi fresh or quality store-bought
  • 2 tablespoons olive oil or vegetable oil
For the Greens
  • 5 ounces fresh spinach
For the Creaminess
  • 4 ounces feta cheese crumbled
For Flavor Enhancement

  • to taste salt
  • to taste black pepper
  • optional red pepper flakes for extra kick

Equipment

  • Large frying pan
  • large pot
  • Slotted Spoon

Method

Cooking Instructions
  1. Bring a large pot of salted water to a vigorous boil over high heat. Add the gnocchi and cook until they float (2-3 minutes). Remove with a slotted spoon and drain excess water.
  2. In a large frying pan, heat olive oil over medium-high heat. Once shimmering, add the cooked gnocchi in a single layer. Fry for 2-3 minutes without stirring to achieve a golden-brown crust, then stir gently and continue frying for another 2 minutes.
  3. Reduce the heat to medium and add minced garlic; sauté for about 1 minute until fragrant.
  4. Add spinach and stir until wilted, about 2-3 minutes, mixing well to combine.
  5. Season with salt, black pepper, and red pepper flakes. Stir to ensure even seasoning.
  6. Gently fold in crumbled feta cheese just before serving.
