- In a large frying pan, heat olive oil over medium-high heat. Once shimmering, add the cooked gnocchi in a single layer. Fry for 2-3 minutes without stirring to achieve a golden-brown crust, then stir gently and continue frying for another 2 minutes.
- Reduce the heat to medium and add minced garlic; sauté for about 1 minute until fragrant.
- Add spinach and stir until wilted, about 2-3 minutes, mixing well to combine.
- Season with salt, black pepper, and red pepper flakes. Stir to ensure even seasoning.
- Gently fold in crumbled feta cheese just before serving.
