  • 1 pound Carrots cut into batons
Glaze
  • 1 tablespoon Coconut Oil melted
  • 2 tablespoons Maple Syrup
Seasoning
  • 1 teaspoon Smoked Paprika
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Ground Coriander or cumin if preferred
  • to taste Salt
  • to taste Black Pepper

Instructions
  1. Preheat your oven to 425°F (220°C).
  2. Combine halved Brussels sprouts and carrot batons with melted coconut oil in a mixing bowl.
  3. Sprinkle in smoked paprika, garlic powder, ground coriander, salt, and black pepper; toss everything to coat well.
  4. Spread the seasoned vegetables on a baking sheet in a single layer.
  5. Roast the vegetables for 20-25 minutes, stirring halfway through.
  6. Drizzle maple syrup over the roasted veggies and stir to coat.
  7. Return to the oven for an additional 5 minutes to caramelize the syrup.
  8. Remove from oven and let cool slightly before serving.
