Ingredients
  

For the Pork
  • 4 pieces Boneless Pork Chops Cut into irregular pieces, at least 1” thick
  • 1 tbsp Shaoxing Wine Substitute with dry sherry for gluten-free
For the Coating
  • 1 tbsp Cornstarch For marinade
  • 0.75 tsp Salt Adjust according to taste
  • 0.5 tsp White Pepper Black pepper can substitute if necessary
  • 0.25 cup Cornstarch For coating
For Frying
  • 2 tbsp Vegetable Oil Plus ½ cup for frying
For the Aromatics
  • 3 cloves Garlic Sliced
  • 1 piece Jalapeno Adjust amount to preference or omit

Method
 

Cooking Instructions
  1. In a mixing bowl, combine the cut boneless pork chops with vegetable oil, Shaoxing wine, cornstarch, and salt. Stir well and let sit for 15 minutes.
  2. Mix together the remaining salt and white pepper in a small bowl.
  3. Heat vegetable oil in a frying pan until it reaches 375°F.
  4. Fry sliced garlic and jalapeno for 1-2 minutes, then remove and drain on paper towels.
  5. Coat the marinated pork chops with the remaining cornstarch.
  6. Fry the pork chops in batches for 2-3 minutes on each side until crispy and golden brown.
  7. Combine the fried pork pieces with fried garlic and jalapeno. Sprinkle with salt and pepper mix and toss gently.
