- In a mixing bowl, combine the cut boneless pork chops with vegetable oil, Shaoxing wine, cornstarch, and salt. Stir well and let sit for 15 minutes.
- Mix together the remaining salt and white pepper in a small bowl.
- Heat vegetable oil in a frying pan until it reaches 375°F.
- Fry sliced garlic and jalapeno for 1-2 minutes, then remove and drain on paper towels.
- Coat the marinated pork chops with the remaining cornstarch.
- Fry the pork chops in batches for 2-3 minutes on each side until crispy and golden brown.
- Combine the fried pork pieces with fried garlic and jalapeno. Sprinkle with salt and pepper mix and toss gently.
