  • ½ cup Shaoxing Wine
  • ¼ cup Soy Sauce Use tamari for gluten-free
  • 2 tbsp Sesame Oil
  • 1 tsp Salt
For the Crispy Coating
  • ½ cup Cornstarch
  • ½ cup Rice Flour Gluten-free option
  • ½ tsp White Pepper
For the Flavor Boost
  • 2 pcs Jalapeños Diced
  • 3 cloves Garlic Fresh
  • 2 tsp Szechuan Peppercorns
  • 1 pcs Red & Green Chili Peppers Sliced
For Frying
  • 2 cups Vegetable Oil Neutral oil for frying

Step-by-Step Instructions
  1. Marinate the pork by cutting it into 1-inch pieces and combining it with Shaoxing wine, soy sauce, sesame oil, cornstarch, and salt. Let it sit for 5-10 minutes.
  2. Prepare the flavor paste by grinding garlic, Szechuan peppercorns, and diced jalapeños into a fine paste.
  3. Heat vegetable oil in a skillet until shimmering. Fry the sliced peppers and garlic until golden.
  4. Prepare the breading by mixing equal parts cornstarch and rice flour with white pepper. Coat the marinated pork with the mixture.
  5. Fry the breaded pork in batches until golden brown and crispy, about 2-3 minutes per side.
  6. Combine the garlic-jalapeño paste in the skillet, then toss the fried pork bites to coat. Serve hot.
