  • 1 tablespoon Lemon Juice or lime juice
  • 1 teaspoon Lemon Zest or lime zest

Method
 

Directions
  1. In a small mixing bowl, combine cream cheese, chopped spring onion, minced fresh chives, lemon juice, lemon zest, and freshly cracked black pepper. Blend until smooth and creamy.
  2. Wash the cucumber and slice into ½ inch rounds. Pat them dry with a paper towel.
  3. Spread about 1 tablespoon of the cream cheese mixture on each cucumber slice.
  4. Top with a piece of smoked salmon, creating an elegant fold for visual interest.
  5. Sprinkle additional cracked black pepper and garnish with extra chives. Optionally, drizzle a little lemon juice on top.
