  • 1 tablespoon Cornstarch
  • 1 teaspoon Salt
  • 1 tablespoon Peanut oil Or any neutral oil
For the Spice Blend
  • 1 tablespoon Whole cumin seeds Toast for more flavor
  • 1 teaspoon Sichuan peppercorns Can replace with black pepper
  • 1 tablespoon Whole coriander seeds Fresh is best, ground can substitute
For the Sauce
  • 2 tablespoons Homemade chili oil Adjust for desired heat
  • 1 tablespoon Chinkiang vinegar Rice vinegar can be used
  • 1 tablespoon Light soy sauce
  • 1 tablespoon Dark soy sauce Tamari is a gluten-free alternative
For Aromatics & Veggies
  • 2 cloves Minced garlic
  • 1 tablespoon Minced ginger
  • 1 medium Red onion Sliced
  • 1 piece Hot green chili Adjust to taste
  • 1/4 cup Cilantro For garnish, can swap with scallions
For Cooking
  • 2 tablespoons Peanut oil
  • 1 teaspoon Salt

Method
 

Step-by-Step Instructions
  1. Prepare homemade hand-pulled noodles or boil store-bought noodles.
  2. Toast whole cumin seeds, Sichuan peppercorns, and coriander seeds for 2-3 minutes.
  3. Marinate lamb with Shaoxing wine, salt, peanut oil, and cornstarch for 15 minutes.
  4. Stir-fry marinated lamb in a hot skillet for 2-3 minutes until browned.
  5. Add sliced red onion and hot green chili; stir-fry for 1-2 minutes.
  6. Combine remaining ground spices, chili oil, soy sauces, and vinegar; cook briefly.
  7. Fold in chopped cilantro and transfer to a serving plate.
  8. If using homemade noodles, boil them briefly and serve topped with the lamb mixture.
  9. Plate the noodles, add lamb mix, and drizzle more chili oil if desired.
