  • 4 oz Semi-sweet chocolate chopped
  • 1 cup Heavy cream or coconut cream for dairy-free

  • 2 tbsp Grand Marnier substitute with orange juice for non-alcoholic
  • 8 oz Biscoff cookies or digestive biscuits
  • 1/2 cup Pistachios can substitute with almonds or hazelnuts
  • 1/4 tsp Kosher salt
For the Finishing Touch
  • 1 cup Confectioners' sugar for dusting

Method
 

Step-by-Step Instructions for Chocolate Salami
  1. In a small bowl, combine dried cranberries with Grand Marnier. Heat in the microwave for about 30 seconds until warm and set aside to cool.
  2. In a medium microwave-safe bowl, combine bittersweet chocolate, semi-sweet chocolate, and heavy cream. Heat at 50% power for 1-2 minutes, stirring every 30 seconds until smooth.
  3. Fold in crushed Biscoff cookies and kosher salt into the melted chocolate ganache until evenly mixed. Add the cooled cranberry mixture and pistachios.
  4. Scoop the chocolate mixture onto a large piece of parchment and roll it into a tight log shape. Twist the ends of the parchment to secure.
  5. Refrigerate the Chocolate Salami for at least 3 hours until firm.
  6. Before serving, dust the outside with confectioners' sugar, and slice into ½-inch thick pieces.
