- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, combine salmon, breadcrumbs, Parmesan cheese, egg, parsley, minced garlic, lemon juice, salt, and pepper until just combined.
- Roll the mixture into golf ball-sized meatballs and place on the prepared baking sheet.
- Bake the meatballs for 15-18 minutes until firm and lightly golden brown.
- In a blender, combine avocado, Greek yogurt, lime juice, and minced garlic. Blend until smooth.
- Remove meatballs from the oven, cool for a couple of minutes, serve with the creamy avocado sauce, and garnish with fresh herbs.
