  • 4 pieces Flour tortillas Corn tortillas work well for a gluten-free option.
  • 1 tablespoon Cooking spray Light brush of oil can also work.
For the Toppings
  • 1 cup Tomatoes, diced Consider using cherry tomatoes for a burst of flavor.
  • 0.5 cup Cilantro, chopped Can be omitted for those who dislike its flavor.
  • 0.5 cup Onion, finely chopped Provides crunch and a mild bite.
  • 1 cup Lettuce, shredded Adds a nice texture contrast.

Equipment

  • nonstick skillet
  • spatula

Method

Step‑by‑Step Instructions
  1. Preheat a nonstick skillet or griddle over medium-low heat for about 5 minutes.
  2. Lightly spray the surface with cooking spray before adding any ingredients.
  3. Place about 1/2 cup of grated cheddar cheese per taco in a thin circular layer directly onto the griddle.
  4. If desired, add sliced jalapeños on top of the cheese.
  5. Cook until the cheese is bubbling and edges start turning golden brown, about 2-3 minutes.
  6. Spread approximately 1/4 cup of refried beans evenly onto each tortilla.
  7. Carefully place the tortilla, bean side down, onto the melted cheese on the griddle.
  8. Gently press down on the tortilla to ensure it sticks to the cheese.
  9. Cook for an additional 2-3 minutes until cheese crispness is achieved.
  10. Using a spatula, carefully flip the taco over, cooking for another 2 minutes.
  11. Remove the taco from the skillet and place on a serving plate.
  12. Add your favorite toppings and serve immediately.
