Method
 

Step-by-Step Instructions
  1. In a medium-sized bowl, mix together olive oil, chili powder, ground cumin, smoked paprika, garlic powder, oregano, ground cinnamon, salt, and pepper. Rub this marinade all over the chicken breasts.
  2. Cover the bowl with plastic wrap and let it marinate in the refrigerator for at least 30 minutes.
  3. Preheat your grill to medium-high heat, around 375°F (190°C). Grill the chicken for 6-7 minutes per side until cooked through.
  4. Prepare a separate grill-safe pan for the diced pineapple and grill for about 2-3 minutes until caramelized.
  5. Remove the chicken from the grill and let it rest for 5 minutes.
  6. Warm your tortillas on the grill for about 1 minute on each side.
  7. Slice the rested chicken into strips and place them onto the warm tortillas. Top with grilled pineapple, red onion, and cilantro. Squeeze lime juice over the top.
  8. Serve immediately with lime wedges on the side.
