- In a medium-sized bowl, mix together olive oil, chili powder, ground cumin, smoked paprika, garlic powder, oregano, ground cinnamon, salt, and pepper. Rub this marinade all over the chicken breasts.
- Cover the bowl with plastic wrap and let it marinate in the refrigerator for at least 30 minutes.
- Preheat your grill to medium-high heat, around 375°F (190°C). Grill the chicken for 6-7 minutes per side until cooked through.
- Prepare a separate grill-safe pan for the diced pineapple and grill for about 2-3 minutes until caramelized.
- Remove the chicken from the grill and let it rest for 5 minutes.
- Warm your tortillas on the grill for about 1 minute on each side.
- Slice the rested chicken into strips and place them onto the warm tortillas. Top with grilled pineapple, red onion, and cilantro. Squeeze lime juice over the top.
- Serve immediately with lime wedges on the side.
