For the Sauce
  • 2 tablespoons unsalted butter substitute with olive oil for a lighter option
  • 3 cloves garlic minced, use fresh for best flavor
  • 2 fillets anchovy fillets can substitute with 1.5 teaspoons of anchovy paste
  • 0.5 cup dry white wine such as Sauvignon Blanc; substitute with chicken broth or omit
  • 1 can canned whole tomatoes preferably San Marzano
  • 1 teaspoon dried oregano fresh herbs can be used as alternatives
  • 1 teaspoon dried thyme fresh herbs can be used as alternatives
  • 0.5 cup black or Castelvetrano olives substitute with any preferred olives
  • 2 tablespoons capers omit if unavailable, but will affect flavor profile
For the Fish
  • 1 pound white fish such as Cod, Halibut, or Tilapia
  • to taste teaspoon sea salt for seasoning
For Garnishing
  • to taste fresh basil or flat-leaf parsley optional garnish for freshness and color
  • to taste teaspoon red pepper flakes optional for heat

Method
 

Step-by-Step Instructions
  1. Preheat the oven to 400°F (200°C).
  2. Melt the butter in a large ovenproof skillet over medium heat.
  3. Add minced garlic and anchovies, cooking until fragrant and anchovies dissolve.
  4. Pour in the white wine and let it simmer for about 4 minutes.
  5. Stir in canned tomatoes, oregano, and thyme; simmer for 10 minutes.
  6. Mix in olives and capers, simmer for another 2-3 minutes.
  7. Season the fish with sea salt, place into the sauce.
  8. Bake for 8-10 minutes until the fish is opaque and flaky.
  9. Garnish with basil or parsley and red pepper flakes before serving.
