  • 6 large Eggs Fresh for optimal fluffiness
  • 1 cup Ricotta Cheese Strained if too watery
  • 1/2 teaspoon Salt Adjust to taste
  • 1/4 teaspoon Pepper Adds gentle kick
Optional Add-ins
  • 1/4 cup Fresh Herbs Chopped basil or chives
  • 1/2 cup Cooked Proteins Diced bacon or shredded spinach
  • 1/2 cup Vegetables Finely chopped bell peppers or onions

Method
 

Cooking Instructions
  1. Preheat your oven to 325°F (163°C).
  2. In a medium mixing bowl, combine the eggs, ricotta cheese, salt, and pepper. Blend until smooth and creamy.
  3. Place silicone molds into a baking pan.
  4. Carefully pour the mixture into the molds, filling them about three-quarters full.
  5. Pour hot water into the baking pan until it reaches halfway up the sides of the molds.
  6. Bake for 25 to 35 minutes, until puffed and firm.
  7. Let the bites cool in the molds for about 10 minutes.
  8. Pop the bites out of the molds and store or serve immediately.
