For the Sauce
  • 2 tablespoons Olive Oil high-quality extra-virgin recommended
  • 1 unit Onion finely chopped
  • 3 cloves Garlic minced
  • 2 cups Cherry Tomatoes halved
  • 1 teaspoon Crushed Red Pepper Flakes adjust to preference
  • 1 cup Vegetable Broth can substitute with chicken broth
  • 1 cup Heavy Cream or use half milk, half melted butter
  • ½ cup Parmesan Cheese grated
  • Salt to taste
  • Pepper to taste
  • 1 unit Lemon Zest for brightening flavors
  • 2 tablespoons Lemon Juice
For the Finish
  • 1 handful Fresh Basil chopped
  • 1 handful Parsley chopped

Method
 

Step-by-Step Instructions
  1. Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add 1 finely chopped onion and sauté for about 5 minutes until translucent.
  2. Stir in 3 minced garlic cloves and cook for 1-2 minutes.
  3. Add 2 cups of halved cherry tomatoes and 1 teaspoon of crushed red pepper flakes and cook for 4-5 minutes.
  4. Gently fold in 2 cans of butter beans.
  5. Pour in 1 cup of vegetable broth and simmer for about 5 minutes.
  6. Stir in 1 cup of heavy cream and ½ cup of grated Parmesan cheese, and simmer for an additional 3-4 minutes.
  7. Season with salt and pepper to taste.
  8. Stir in chopped basil, parsley, lemon zest, and lemon juice.
  9. Serve warm, garnished with additional Parmesan cheese and herbs.
