For the Soy Ginger Sauce

  • 2 tbsp Low Sodium Soy Sauce Substitute with tamari for a gluten-free option.
  • 1/2 tsp Coconut Sugar or Regular Sugar Consider using coconut sugar for a healthier choice.
  • 1/2 cup Reserved Chicken Cooking Water Always save some from cooking.
  • 2 tbsp Ginger Finely chopped to intensify the flavor.
  • 4 whole Scallions Finely chopped to add freshness.

Method
 

Cooking Instructions
  1. In a large pot, bring 6 cups of water to a rolling boil over medium-high heat. Once boiling, add 2 slices of fresh ginger, 3 whole scallions (white parts only), and your chicken drumsticks.
  2. Reduce heat to medium-low and allow the pot to simmer gently for about 10 minutes, ensuring the chicken is fully cooked.
  3. Turn off the heat and keep the pot covered for an additional 15 minutes to allow the chicken to continue cooking.
  4. Prepare an ice water bath in a large bowl filled with ice and cold water. Carefully transfer the poached chicken to the ice bath for about 20 minutes.
  5. In a mixing bowl, combine 3 tablespoons of olive or sesame oil, 2 tablespoons of low sodium soy sauce, and 1/2 teaspoon of coconut sugar. Stir in 1/2 cup of reserved chicken cooking water, along with 2 tablespoons of finely chopped ginger and 4 finely chopped scallions.
  6. Once the chicken is fully cooled, shred it onto a serving plate and pour the prepared ginger scallion sauce over the chicken.
