- In a large pot, bring 6 cups of water to a rolling boil over medium-high heat. Once boiling, add 2 slices of fresh ginger, 3 whole scallions (white parts only), and your chicken drumsticks.
- Reduce heat to medium-low and allow the pot to simmer gently for about 10 minutes, ensuring the chicken is fully cooked.
- Turn off the heat and keep the pot covered for an additional 15 minutes to allow the chicken to continue cooking.
- Prepare an ice water bath in a large bowl filled with ice and cold water. Carefully transfer the poached chicken to the ice bath for about 20 minutes.
- In a mixing bowl, combine 3 tablespoons of olive or sesame oil, 2 tablespoons of low sodium soy sauce, and 1/2 teaspoon of coconut sugar. Stir in 1/2 cup of reserved chicken cooking water, along with 2 tablespoons of finely chopped ginger and 4 finely chopped scallions.
- Once the chicken is fully cooled, shred it onto a serving plate and pour the prepared ginger scallion sauce over the chicken.
