For the Stuffing
  • 120 g Lump Crab Meat Canned crab can be used if fresh isn't available.
  • 120 g Cooked Shrimp, Chopped Swap with canned or frozen shrimp if necessary.
  • 60 g Cream Cheese, softened Consider low-fat cream cheese for a lighter dish.
  • 1 tablespoon Mayonnaise Greek yogurt can be a substitute.
  • 1 tablespoon Fresh Parsley, Chopped Chives or dill can be substituted.
  • 1/2 teaspoon Garlic Powder Fresh garlic can be used for bolder taste.
  • 1/2 teaspoon Paprika Smoked paprika provides a lovely variation.
  • 1 teaspoon Dijon Mustard Yellow mustard can serve as an alternative.
  • 1/2 teaspoon Salt Adjust according to taste.

  • 30 g Breadcrumbs Gluten-free breadcrumbs can be used.
For Cooking
  • 1 tablespoon Olive Oil Any high smoke-point oil works well.

Method
 

Preparation
  1. In a medium mixing bowl, combine the chopped shrimp, lump crab meat, softened cream cheese, breadcrumbs, mayonnaise, Dijon mustard, garlic powder, paprika, chopped parsley, salt, and black pepper. Mix until creamy and cohesive.
  2. Preheat your oven to 190°C (375°F). Cut a deep pocket into each salmon fillet, seasoning inside and outside with salt and pepper.
  3. Stuff the salmon pockets with crab and shrimp mixture, pressing gently. Secure edges with toothpicks if needed.
  4. Heat olive oil in an oven-safe skillet over medium-high heat. Sear the stuffed salmon fillets for 2-3 minutes on each side.
  5. Transfer the skillet to the preheated oven and bake stuffed salmon for 12-15 minutes or until the fish is opaque and flakes easily.
  6. Remove from oven, let salmon rest for a few minutes, plate elegantly, and serve with fresh lemon wedges.
