Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan with almond butter or cooking spray.
  2. Peel and chop two medium sweet potatoes into chunks, cook in boiling water for about 15-20 minutes, then mash until smooth.
  3. In a large mixing bowl, combine the mashed sweet potatoes, almond butter, maple syrup, eggs, and vanilla extract until smooth.
  4. Add grated ginger, cinnamon, nutmeg, cloves, and salt; mix until incorporated.
  5. Gently fold in the baking soda.
  6. Pour the batter into the prepared cake pan and smooth the top.
  7. Bake for 30 to 35 minutes or until a toothpick comes out clean.
  8. Cool in the pan for 10 minutes, then turn onto a wire rack to cool completely.
