- Preheat a non-stick skillet over medium heat for about 2 minutes.
- Add a small pat of butter and let it melt.
- Crack one large egg into the skillet, seasoning with salt and pepper, and cook for 2-3 minutes until whites are set but yolk is runny.
- Repeat with the second egg, then set both aside.
- In the same skillet, add another small dab of butter and place one tortilla in.
- Sprinkle half of the shredded cheese over the tortilla and layer in the fried eggs.
- Add optional avocado slices and sprinkle the remaining cheese over the top.
- Place a second tortilla on top, pressing down gently.
- Cook for 2-3 minutes until the bottom tortilla is golden brown and crispy. Check frequently.
- Flip carefully using a spatula and cook the second side for an additional 2-3 minutes until golden brown and cheese has melted.
- Transfer the quesadilla to a cutting board, let cool slightly, and slice into wedges.
