  • 1 cup warm water (110°F/45°C)
  • 1 tablespoon honey or sugar
  • 3 cups all-purpose flour can substitute with bread flour
  • 1 teaspoon salt
  • 2 tablespoons olive oil for dough
For the Topping
  • 4 tablespoons unsalted butter melted
  • 2 tablespoons olive oil for topping
  • 3 cloves garlic minced
  • 1 tablespoon Italian seasoning or fresh herbs
  • to taste salt and black pepper
  • 2 tablespoons fresh rosemary or thyme chopped
  • optional grated Parmesan

Method
 

Step-by-Step Instructions
  1. In a small bowl, combine warm water, active dry yeast, and honey or sugar. Stir gently and let sit for about 5-10 minutes until foamy.
  2. In a large mixing bowl, combine all-purpose flour and salt. Make a well in the center, pour in the yeast mixture and olive oil. Mix until a soft, sticky dough forms.
  3. Shape the dough into a ball and place it in a lightly oiled bowl. Cover and let rise in a warm area for about 1 hour or until doubled.
  4. Preheat the oven to 375°F (190°C) and grease a 12-cup muffin tin.
  5. After rising, punch down the dough, divide into 12 pieces, shape into balls, and place in muffin cups. Brush with garlic butter mixture.
  6. Let muffins rest for 10 minutes, then bake for 18-20 minutes until golden brown.
  7. Remove from oven, brush with remaining garlic butter, sprinkle with herbs and Parmesan, then cool slightly before serving warm.
