- In a small bowl, combine warm water, active dry yeast, and honey or sugar. Stir gently and let sit for about 5-10 minutes until foamy.
- In a large mixing bowl, combine all-purpose flour and salt. Make a well in the center, pour in the yeast mixture and olive oil. Mix until a soft, sticky dough forms.
- Shape the dough into a ball and place it in a lightly oiled bowl. Cover and let rise in a warm area for about 1 hour or until doubled.
- Preheat the oven to 375°F (190°C) and grease a 12-cup muffin tin.
- After rising, punch down the dough, divide into 12 pieces, shape into balls, and place in muffin cups. Brush with garlic butter mixture.
- Let muffins rest for 10 minutes, then bake for 18-20 minutes until golden brown.
- Remove from oven, brush with remaining garlic butter, sprinkle with herbs and Parmesan, then cool slightly before serving warm.
