Preparation and Layering
- Preheat your broiler to high and prepare the pans by greasing with butter and lining with parchment paper.
- Cream together almond paste and softened unsalted butter, then beat in egg yolks and rum. Whip egg whites until stiff, then fold into the mixture.
- Spoon a small amount of batter into the pan, spread into an even layer, and broil for 45-60 seconds until golden brown.
- Continue layering batter and applying apricot jam, broiling until all batter is used and there are at least four layers.
- Let the cake cool completely in the pan, allowing layers to set.
- Brush the cake with apricot jam, then melt chocolate with cream and coconut oil. Pour the glaze over the cake, coating evenly.
- Slice the cake into wedges and serve with whipped cream or coffee.
