Ingredients
  

For the Batter
  • 8 oz Almond Paste or Almond Flour and Honey; marzipan can be used as a substitute.
  • 1 cup Butter unsalted
  • 12 large Eggs use in yolks and whipped whites.
  • 1 cup Sugar don’t reduce more than 10-20%.
  • 2 cups Flour can use gluten-free flour blends.
  • 2 tbsp Cornstarch can be omitted.
  • 2 tbsp Rum can replace with water or vanilla extract.
For the Jam Layer
  • ½ cup Apricot Jam can be replaced with another tart fruit jam.
For the Glaze
  • 8 oz Chocolate dark or white chocolate.
  • 1 cup Cream
  • 2 tbsp Coconut Oil

Method
 

Preparation and Layering
  1. Preheat your broiler to high and prepare the pans by greasing with butter and lining with parchment paper.
  2. Cream together almond paste and softened unsalted butter, then beat in egg yolks and rum. Whip egg whites until stiff, then fold into the mixture.
  3. Spoon a small amount of batter into the pan, spread into an even layer, and broil for 45-60 seconds until golden brown.
  4. Continue layering batter and applying apricot jam, broiling until all batter is used and there are at least four layers.
  5. Let the cake cool completely in the pan, allowing layers to set.
  6. Brush the cake with apricot jam, then melt chocolate with cream and coconut oil. Pour the glaze over the cake, coating evenly.
  7. Slice the cake into wedges and serve with whipped cream or coffee.
