  • 2 cups All-purpose Flour
  • 1 packet Quick Rise Yeast Use warm water to activate
  • 1 teaspoon Salt
  • 1 cup Warm Water Around 110°F
  • 2 tablespoons Olive Oil Can substitute with canola oil
Tzatziki Sauce Ingredients
  • 1 cup Plain Greek Yogurt Opt for non-fat for a lighter version
  • 2 tablespoons Greek Marinade/Dressing
  • 2 cloves Garlic (minced)
  • 1 tablespoon Fresh Dill Can substitute with dried dill
  • 1 tablespoon Lemon Juice Use fresh juice
  • 1 cup Cucumber (sliced) For garnish
Pizza Toppings
  • 1 cup Gyro Meat (chopped) Swap for grilled chicken or lamb if preferred
  • 1 medium Red Onion/Shallot (sliced) Green onions work well too
  • 1 cup Cherry Tomatoes (sliced) Grape tomatoes are a good substitute
  • 1 medium Bell Pepper (sliced) Any variety
  • 1 cup Artichoke Hearts (sliced) Can use fresh or canned
  • 1 cup Portabella Mushrooms (chopped) Button mushrooms are a good alternative
  • to taste Salt & Pepper To season

Method
 

Dough Preparation
  1. In a small bowl, combine warm water (around 110°F) with quick rise yeast and let it activate for 10 minutes until frothy.
  2. In a large mixing bowl, whisk together flour and salt, then drizzle in olive oil.
  3. Pour the activated yeast mixture into the flour and mix until combined.
  4. Knead the dough on a floured surface for about 10 minutes until smooth, then place it in a warm spot to rise for 1 hour, or until it has doubled in size.
Baking Preparation
  1. Once the dough is rising, set your oven’s broiler to high and place a pizza stone inside.
  2. Allow the pizza stone to heat for 30 minutes, then lower the temperature to 375°F.
Roasting Toppings
  1. Slice the cherry tomatoes and artichokes, then lay them on a baking sheet.
  2. Drizzle with olive oil, sprinkle with salt and pepper, and toss to coat.
  3. Roast these toppings in the preheated oven for about 10-15 minutes until they are tender and fragrant.
Making Tzatziki Sauce
  1. In a mixing bowl, combine plain Greek yogurt, minced garlic, fresh dill, and lemon juice.
  2. Stir until well blended and creamy, then season with salt and pepper to taste.
  3. Cover it and chill it in the refrigerator until you're ready to assemble your pizza.
Shaping Dough
  1. After the dough has risen, gently punch it down and knead briefly.
  2. Shape the dough into a disk and let it rise for another 10-30 minutes until slightly puffed.
  3. Roll it out on a floured surface to your desired thickness.
Assembling Pizza
  1. On the rolled-out dough, brush a layer of Greek marinade evenly across the surface.
  2. Spread a generous layer of chilled tzatziki sauce, then scatter the chopped gyro meat and your roasted toppings.
  3. Add sliced mushrooms, bell peppers, red onions, and crumbled feta for extra flavor.
Baking Pizza
  1. Slide your assembled Gyro Pizza onto the hot pizza stone in the oven and bake at 375°F for about 15 minutes.
  2. Turn on the broiler for an additional 5-10 minutes to achieve a golden and bubbling crust.
Garnishing
  1. Once baked, remove the Gyro Pizza from the oven and let it cool for a minute.
  2. Top with sliced cucumber and drizzle any remaining tzatziki sauce over the pizza for freshness.
