Step-by-Step Instructions
  1. Preheat your oven to 325°F (160°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine rolled oats, mixed nuts, pumpkin seeds, chia seeds, flaxseeds, dried cranberries, cinnamon, and salt.
  3. Heat a saucepan over low heat and combine peanut or almond butter with honey or maple syrup. Stir until smooth and then add vanilla extract.
  4. Pour the wet mixture over the dry ingredients and mix until well combined.
  5. Scoop portions onto the baking sheet, about 2 inches apart, and flatten slightly.
  6. Bake for 12-15 minutes until golden around the edges and soft in the center.
  7. Cool on the baking sheet before transferring to a wire rack.
