Step-by-Step Instructions
  1. Prep Your Ingredients: Chop onions, carrots, celery, and cut beef into uniform pieces.
  2. Cook the Bacon and Sear the Beef: Cook bacon over medium heat until crisp, then sear beef in bacon fat.
  3. Sauté the Vegetables: Add onions, garlic, carrots, and celery to remaining bacon fat and sauté until softened.
  4. Combine and Add Broth: Stir in tomato paste, return beef and bacon, pour in broth, season and bring to simmer.
  5. Simmer the Stew: Cover and simmer for 90 minutes to tenderize meat and blend flavors.
  6. Prepare the Dumpling Mixture: Mix flour, cheddar, shortening, then add milk until just combined.
  7. Finish Your Stew: Optionally add vegetables, cook for another 30 minutes, preheat oven to 400°F.
