Step-by-Step Instructions for High Protein Veggie Lasagna
  1. Preheat your oven to 375°F (190°C). Gather all your ingredients.
  2. In a large skillet, heat a tablespoon of olive oil over medium heat. Add diced bell peppers and spinach, sauté for 5-7 minutes until softened.
  3. In a mixing bowl, combine ricotta cheese, egg, garlic powder, Italian seasoning, salt, and pepper. Mix until smooth.
  4. Spoon a layer of ricotta mixture in a baking dish, layer zucchini or noodles, add sautéed vegetables, dollops of cheese mixture, and sprinkle mozzarella.
