Ingredients

  • 3/4 cup Granulated sugar
  • 1 tbsp Vanilla extract
  • 1 large Egg Can substitute with egg replacer
  • 2 cups All-purpose flour Can substitute with gluten-free flour
  • 1 tsp Baking soda
  • 1/2 tsp Salt Omit if using salted butter
  • 1/2 tsp Ground cinnamon Adjust to taste
  • 1/4 tsp Ground nutmeg Adjust to taste
For the Creme Brûlée Topping
  • 1 cup Heavy cream Can substitute with half-and-half
  • 1/4 cup Brown sugar May use white sugar as a substitute
  • 1 tbsp Cornstarch Can use equal amount of flour

Method
 

Preparation Steps
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream together the softened unsalted butter and granulated sugar until light and fluffy, about 2-3 minutes.
  3. Incorporate the vanilla extract and the large egg into the mixture and mix until fully combined, about 1 minute.
  4. Whisk together the all-purpose flour, baking soda, salt, ground cinnamon, and ground nutmeg in a separate bowl.
  5. Gradually add the dry ingredients to the wet mixture, stirring until a cohesive dough forms.
  6. Scoop out tablespoonfuls of dough and roll them into 1-inch balls, placing them on the prepared baking sheet.
  7. Using the back of a spoon or your fingers, gently press down on each cookie dough ball to flatten them.
  8. Bake the cookies for 10-12 minutes until the edges are golden and the centers are set.
  9. Let the cookies cool on the baking sheet for about 5 minutes before transferring.
  10. To create the topping, simmer the heavy cream in a small saucepan until just about to boil.
  11. In a separate bowl, mix brown sugar and cornstarch, then add to the warmed cream and whisk until thickened, about 2-3 minutes.
  12. Spoon the cream mixture generously over each cookie once thickened.
  13. Switch your oven setting to broil and place the cookies under the broiler for 1-2 minutes until the topping is golden.
  14. Allow the cookies to cool completely before serving.
