Ingredients
  

For the Meatballs
  • 1 lb Ground Beef or Lamb Use a mix for added depth.
  • 1 medium Onion Grated onion blends easily.
  • 2 cloves Garlic Minced for flavor.
  • 1/4 cup Parsley Chopped.
  • 1/4 cup Cilantro Chopped.
  • 1 tsp Paprika Fresh spices for better taste.
  • 1 tsp Cumin
  • 1/2 tsp Cinnamon
  • 1/2 tsp Ginger
For the Sauce
  • 2 tbsp Olive Oil For sautéing.
  • 2 tbsp Tomato Paste Thickens the sauce.
  • 2 cups Grated Tomatoes Canned alternatives can be used.
  • 4 large Eggs Poached in the sauce.

Method
 

Instructions
  1. Combine ground beef or lamb with grated onion, garlic, parsley, cilantro, and spices. Form into meatballs and chill for 30 minutes.
  2. Heat olive oil, sauté onions until golden. Add garlic, tomato paste, and grated tomatoes. Simmer for 25-30 minutes.
  3. Add meatballs to the sauce, cover, and cook for 10-15 minutes until cooked through.
  4. Create wells in sauce, crack eggs into each and poach for 10-15 minutes until whites are set.
  5. Garnish with herbs and serve with crusty bread or couscous.
