  • 1 cup Chicken broth Homemade or store-bought works well.
  • 1/2 cup White wine Lemon juice is a non-alcoholic substitute.

Method
 

Step‑by‑Step Instructions
  1. Prepare chicken by flattening each breast between plastic wrap to about ½ inch thickness.
  2. Season both sides of the chicken with salt and pepper.
  3. Wrap two slices of prosciutto and a sage leaf around each chicken breast.
  4. Dredge each chicken bundle lightly in flour, shaking off excess.
  5. Heat olive oil and unsalted butter in a skillet over medium-high heat.
  6. Place chicken bundles in the skillet, prosciutto side down, and cook for 4-5 minutes.
  7. Flip the chicken and add more butter, cooking for another 4-5 minutes until the internal temperature reaches 165°F.
  8. Remove chicken and pour in chicken broth and white wine, scraping up browned bits.
  9. Simmer sauce for 2-3 minutes to thicken.
  10. Return the chicken to the pan to soak in the sauce before serving.
