Ingredients
  

For the Noodles
  • 8 ounces Sweet Potato Glass Noodles look for 'sweet potato starch noodles'
For the Protein
  • 16 ounces Beef or Pork can substitute with tofu for vegetarian option
For the Eggs
  • 2 large Eggs can be omitted for vegan option
For the Vegetables
  • 1 large Carrot julienned
  • 1 medium Yellow Onion thinly sliced
  • 3 Mushrooms any variety, thinly sliced
  • 2 cups Baby Spinach packed
  • 2 stalks Green Onion cut into 1-inch pieces
For Cooking
  • Cooking Oil vegetable, olive or sesame oil
For Garnishing
  • Toasted Sesame Seeds optional but recommended
For Seasoning
  • Salt and Black Pepper to taste
  • 7 tablespoons Soy Sauce light sodium
  • 3 tablespoons Honey or 2 tablespoons of Brown Sugar vegans can use agave syrup
  • 2 tablespoons Toasted Sesame Oil optional

Method
 

Step-by-Step Instructions for Japchae
  1. In a mixing bowl, whisk together soy sauce, honey or brown sugar, and toasted sesame oil.
  2. Bring a large pot of water to a boil and add the sweet potato glass noodles. Cook until tender and chewy, then drain and rinse under cold water.
  3. In a skillet, heat cooking oil and pour in beaten eggs, swirling to create an even layer. Cook until set and slice into strips.
  4. Add oil if necessary and sear thinly sliced beef or pork in the skillet for about 3-4 minutes, seasoning with salt and pepper.
  5. Sauté onions in the skillet for 2-3 minutes, add carrot and mushrooms, then add spinach and cook until wilted.
  6. Return cooked noodles to the skillet with sautéed vegetables. Pour the prepared sauce over and add the meat and egg strips. Toss gently.
  7. Transfer the Japchae to a serving platter and garnish with toasted sesame seeds.

Notes

Rinse cooked noodles in cold water to prevent sticking. Adjust seasoning after adding soy sauce to avoid overpowering flavors.
