- In a large bowl, combine ground beef with salt and black pepper, mixing gently until just combined. Form 12 small patties, about ½-inch thick, placing a slight dimple in the center of each.
- In a medium bowl, whisk together mayonnaise, minced garlic, Dijon mustard, and lemon juice until smooth. Cover and refrigerate the aioli for at least 15 minutes.
- Toast the mini brioche buns cut-side down in a skillet over medium heat until golden brown, approximately 30 seconds.
- Preheat a grill or skillet to medium-high heat. Cook the patties for about 3-4 minutes, flipping them once browned. Top with cheese after flipping.
- On the bottom half of each bun, spread garlic aioli. Layer lettuce, then a burger patty and quick-pickled cucumber slices. Finish with the top half of the bun.
