- Preheat your oven to 350°F (175°C) and spray a baking sheet with olive oil.
- In a mixing bowl, combine ground beef with salt, black pepper, paprika, Italian seasoning, garlic powder, ground cumin, and grated onion. If using, add the egg white.
- Slice mini peppers in half lengthwise and remove seeds. Fill each half with the beef mixture.
- Place filled peppers on the baking sheet and bake for about 20 minutes until tender and beef is cooked.
- Sprinkle shredded mozzarella cheese over the tops of each pepper and return to the oven for an additional 3-4 minutes until melted.
- Garnish with freshly chopped parsley if desired and serve warm.
