Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and spray a baking sheet with olive oil.
  2. In a mixing bowl, combine ground beef with salt, black pepper, paprika, Italian seasoning, garlic powder, ground cumin, and grated onion. If using, add the egg white.
  3. Slice mini peppers in half lengthwise and remove seeds. Fill each half with the beef mixture.
  4. Place filled peppers on the baking sheet and bake for about 20 minutes until tender and beef is cooked.
  5. Sprinkle shredded mozzarella cheese over the tops of each pepper and return to the oven for an additional 3-4 minutes until melted.
  6. Garnish with freshly chopped parsley if desired and serve warm.
