  • 3 cups Cooked Rice Staple to serve under pot roast.
  • 1/4 cup Fresh Cilantro For garnish; parsley is an alternative.
  • 1 cup Kimchi Optional, but recommended for authentic taste.

Method
 

Cooking Steps
  1. Begin by preheating your oven to 300°F (150°C).
  2. In a Dutch oven, heat 2 tablespoons of vegetable oil over medium-high heat, then sear the beef chuck roast for 4-5 minutes on each side until golden brown.
  3. Remove the beef and add 1 chopped sweet onion, 6 minced garlic cloves, and 1 tablespoon of grated fresh ginger to sauté for 3-4 minutes.
  4. Stir in 2 tablespoons of gochujang, 1/4 cup of brown sugar, and 1/2 cup of soy sauce, then pour in 2 cups of beef broth and bring to a gentle simmer.
  5. Return the beef to the pot, cover, and bake for 3 to 4 hours until tender.
  6. Let the pot roast rest for 10 minutes, then serve over cooked rice with cilantro and kimchi.
