Preparation Steps
- Preheat the oven to 375°F (190°C) and grease a 9x13-inch baking dish with olive oil.
- Thinly slice the sweet potatoes, butternut squash, and carrots, aiming for 1/8 inch thickness.
- Layer sweet potatoes at the bottom of the greased dish, followed by a layer of butternut squash.
- Sprinkle crumbled feta cheese and chopped walnuts over the butternut squash layer and add a layer of carrots.
- Drizzle cranberry-honey glaze over the layers, repeating the layering process until all ingredients are used.
- Cover with aluminum foil and bake for 45 minutes, then remove foil and bake for an additional 15 minutes.
- Allow the lasagna to rest for at least 10 minutes before slicing and serving.
