Method
 

Preparation Steps
  1. Preheat the oven to 375°F (190°C) and grease a 9x13-inch baking dish with olive oil.
  2. Thinly slice the sweet potatoes, butternut squash, and carrots, aiming for 1/8 inch thickness.
  3. Layer sweet potatoes at the bottom of the greased dish, followed by a layer of butternut squash.
  4. Sprinkle crumbled feta cheese and chopped walnuts over the butternut squash layer and add a layer of carrots.
  5. Drizzle cranberry-honey glaze over the layers, repeating the layering process until all ingredients are used.
  6. Cover with aluminum foil and bake for 45 minutes, then remove foil and bake for an additional 15 minutes.
  7. Allow the lasagna to rest for at least 10 minutes before slicing and serving.
