Step-by-Step Instructions
  1. Cook the bacon in a skillet over medium heat until crispy, about 6-8 minutes. Transfer bacon to a paper towel-lined plate to cool. Reserve 2 tablespoons of the bacon grease in the skillet.
  2. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  3. In a large bowl, combine cauliflower florets with reserved bacon grease, garlic powder, and black pepper. Toss until evenly coated.
  4. Spread coated cauliflower on the prepared baking sheet. Roast for 18-22 minutes, flipping halfway for even cooking.
  5. After roasting, sprinkle cheddar cheese over the cauliflower and return to the oven for 2-3 minutes until cheese is melted.
  6. Top with crumbled bacon, green onions, and ranch dressing. Serve immediately.
