Step-by-Step Instructions for Mango Sago
  1. Begin by bringing a medium saucepan of water to a rolling boil over high heat. Once boiling, carefully add the sago pearls and stir gently to prevent sticking. Cook for about 15 minutes, or until the pearls become translucent with a slight white center remaining. Remove from heat, cover, and let them sit for an additional 15 minutes to fully soften.
  2. Once the sago pearls are cooked, drain them in a fine mesh strainer and rinse thoroughly under cold running water to remove excess starch. Next, soak them in cold water for another 5 minutes to prevent clumping. After soaking, drain again and set the sago aside in a bowl.
  3. While the sago cools, peel and dice your ripe mango into chunks. Place the mango pieces into a blender along with the chilled evaporated milk. Blend on high until you achieve a smooth, creamy texture, which typically takes about 30 seconds.
  4. In a large mixing bowl, combine the cooled sago pearls, chopped mango pieces, coconut jelly, and mango jelly. Pour in the blended mango mixture as well as the coconut milk and condensed milk. Stir gently together until everything is well incorporated.
  5. Once everything is mixed, cover the bowl and refrigerate the Mango Sago for at least one hour to allow the flavors to meld and the dessert to chill.
