Method
 

Instructions
  1. Preheat your oven to 400°F (200°C).
  2. Pat the pork tenderloin dry and rub it with olive oil, then season with salt and pepper.
  3. In a bowl, whisk together maple syrup, Dijon mustard, soy sauce, and garlic powder.
  4. Place pork in a baking dish and pour half the glaze over it.
  5. Roast the pork for 20 minutes, then drizzle the remaining glaze over the top.
  6. Return to the oven and roast for an additional 5 minutes, or until the internal temperature reaches 145°F (63°C).
  7. Let the pork rest covered with foil for 5 to 10 minutes before slicing.
  8. Slice into medallions and serve with your favorite sides.
