- Preheat your oven to 400°F (200°C).
- Pat the pork tenderloin dry and rub it with olive oil, then season with salt and pepper.
- In a bowl, whisk together maple syrup, Dijon mustard, soy sauce, and garlic powder.
- Place pork in a baking dish and pour half the glaze over it.
- Roast the pork for 20 minutes, then drizzle the remaining glaze over the top.
- Return to the oven and roast for an additional 5 minutes, or until the internal temperature reaches 145°F (63°C).
- Let the pork rest covered with foil for 5 to 10 minutes before slicing.
- Slice into medallions and serve with your favorite sides.
