  1. In a large skillet, heat 1 tablespoon of oil over medium heat until shimmering. Add the minced onion and cook for about 3-4 minutes, stirring occasionally, until softened and translucent.
  2. Stir in the 3 cloves of minced garlic, cooking for an additional 30 seconds until fragrant. Then, add 2 tablespoons of tomato paste, 1/2 teaspoon of salt, 1/4 teaspoon of oregano, 1/4 teaspoon of paprika, and 1/4 teaspoon of red pepper flakes. Cook this mixture for about 2 minutes.
  3. Pour in 1/2 cup of vegetable broth, stirring to combine. Next, gently fold in the drained and rinsed white beans along with 1/4 cup of sliced sun-dried tomatoes. Let this simmer for 4-5 minutes.
