Preparation Steps
- In a large mixing bowl, combine extra virgin olive oil, lemon juice, minced garlic, oregano, paprika, salt, and pepper. Add the chicken and marinate for at least 15 minutes.
- Chop the cucumber, cherry tomatoes, red bell pepper, and red onion into small pieces. In another bowl, mix with parsley, feta, lemon juice, salt, and pepper.
- Heat a skillet over medium-high heat, add a little olive oil and cook the marinated chicken until golden brown and fully cooked, about 6-9 minutes.
- Warm the pitas. Fill each pita with the cooked chicken, top with salsa, and add a dollop of tzatziki.
