For the Chicken Marinade
  • 1 pound Boneless Skinless Chicken Breast, cut into 1-inch chunks
  • 3 tablespoons Extra Virgin Olive Oil
  • 2 tablespoons Lemon Juice
  • 1 teaspoon Lemon Zest
  • 3 cloves Garlic, minced
  • 1 teaspoon Dried Oregano
  • 1 teaspoon Smoked Paprika
  • 1 teaspoon Kosher Salt
  • 1/2 teaspoon Black Pepper, freshly ground
For the Salsa
  • 1 cup Cucumber, chopped
  • 1 cup Cherry Tomatoes, halved
  • 1 cup Red Bell Pepper, chopped
  • 1/2 cup Red Onion, chopped
  • 1/4 cup Fresh Parsley, chopped or mint, basil, dill
  • 1/2 cup Feta Cheese, crumbled
  • 1 tablespoon Lemon Juice
  • 1/4 teaspoon Kosher Salt
  • 1/4 teaspoon Black Pepper
For Serving
  • 4 pieces Whole Wheat Pitas can substitute with tortilla wraps
  • 1 cup Tzatziki for serving

Method
 

Preparation Steps
  1. In a large mixing bowl, combine extra virgin olive oil, lemon juice, minced garlic, oregano, paprika, salt, and pepper. Add the chicken and marinate for at least 15 minutes.
  2. Chop the cucumber, cherry tomatoes, red bell pepper, and red onion into small pieces. In another bowl, mix with parsley, feta, lemon juice, salt, and pepper.
  3. Heat a skillet over medium-high heat, add a little olive oil and cook the marinated chicken until golden brown and fully cooked, about 6-9 minutes.
  4. Warm the pitas. Fill each pita with the cooked chicken, top with salsa, and add a dollop of tzatziki.
