- Preheat your oven to 350°F (175°C) and prepare a 9x13 inch baking pan by buttering it and lining with parchment paper.
- In a stand mixer, combine softened butter and white sugar, beating until light and fluffy. Add eggs one at a time, blending well. Mix in sour cream, vanilla extract, and banana extract until smooth.
- In a separate bowl, whisk together flour, baking soda, and salt. Gradually add to the wet mixture while mixing on low speed. Fold in mashed bananas until evenly distributed.
- Pour the banana batter into the prepared pan and bake for 22 to 25 minutes until a toothpick comes out with a few moist crumbs. Cool on a wire rack.
- Prepare the frosting by beating cream cheese and butter until smooth. Gradually add confectioners’ sugar and vanilla extract, mixing well.
